Rome is a city of ruins, churches, fountains, traffic, heat, beauty, and four pasta dishes people will absolutely argue about.

That argument is part of the charm.

Carbonara, amatriciana, gricia, and cacio e pepe are not complicated because they have many ingredients. They are complicated because they have so few. There is nowhere for a bad choice to hide.

Carbonara is richer than it looks

At its best, carbonara is eggs, pecorino, black pepper, guanciale, and pasta water becoming something glossy and almost impossible to stop eating.

Cream is not the point. Timing is the point. Heat is the point. The sauce should cling, not scramble.

Amatriciana has a little drama

Tomato, guanciale, pecorino, and chili give amatriciana more brightness and edge. It is the pasta for the person who wants Roman restraint with a little red-sauce satisfaction.

Order it when you want comfort without softness.

Gricia is the quiet expert move

Gricia is sometimes described as carbonara without egg or amatriciana without tomato. That undersells it.

It is guanciale, pecorino, pepper, pasta water, and confidence. When done well, it may be the most elegant of the four.

Cacio e pepe is the test

Cheese, pepper, pasta. That is all, which is why it goes wrong so easily.

A great cacio e pepe is creamy without cream, sharp without being harsh, and simple without being plain. It tastes like someone knew exactly when to stop.

Do not order all four alone

The best way to learn them is with other people. Order two, share, then order differently the next night. Rome is not going anywhere, and neither is dinner.
